One of the things I loved most about being in Spain was the food. Its not a big secret that I looooooooove food (I mean look at the name of the blog right). The food was exquisite all the way around; fresh, seasoned well, cooked to perfection, and filling beyond explanation. While we were there I took advantage of the salads and they all left me more than satisfied. They were sweet and a little tangy but just enough to make your taste buds pop. YUM!
And as promised, a few pictures from our date night! I can really see the difference in my body. It always feels good to see your hard work paying off! Last night we went to Nando's and I had a salad and 3 signature chicken wings. I wanted 5 wings and some fries, but I made a better decision.
So today I was in the mood for something quick and tasty for lunch since we are having an all day movie day! On the list-
- The Dark Night
- Journey to the Center of the Earth 2 (on right now)
- Star Trek
- The Wrath of the Titans
- The Woman in Black (Feature Presentation of course)
In the middle of all this movieness, I had to jump up and make lunch for TheHubby (he had brats and fries, jerk) and myself. Enter delicious Salad!! I had Spain on my mind and came up with this beauty.
Sweet Mediterranean Salad
2 cups Romaine
4 sun dried tomatoes cut into fourths
1/2 6" cucumber
5 croutons
1 slice red onion, chopped
2 T Feta Cheese
1/2 T slivered almonds
1/2 T dried cranberries
Dressing of choice. I used Poppy seed. Just a bit though because it isnt the MOST healthy dressing out there!
1- MIX ALL TOGETHER!! Simple right!
