Strawberries and Cream Oatmeal

Today was Mugsy's first doctors appointment and boy was it a hot mess.  He was all over the place in there.  And when the thermometer had to go up his little booty he was quite the sight to see.  Pobrecito!  Since we got up so early I had to make a quick breakfast of scrambled eggs, 2 slices turkey bacon and 1 piece of toast, dry.  Have I ever told you I hate scrambled eggs? Big time. Once we got home I was still hungry so I downed a liter of H20 and waited until 12 for lunch.  BOY was I craving some oatmeal. Oats along with some Good Ole Harry Potter (marathon of course) is all a girl needs.  Especially when it's the end of the month.  Harry tears and oatmeal are so much better than tears and chocolate lol.  I would have given a large piece of some important body part to have been in this movie.  It is literally my favorite series of all time.  Anyway, back to the oatmeal.

<----- This baby over here is packing nutrients and only about 300 calories and 36g Carbs.  Not to shabby at all.  Here's the skinny:

Strawberries and Cream Oatmeal

1/2 cup Rolled Oats
1/2 unsweetened almond milk
6 medium strawberries
2 tbsp chobani plain greek yogurt
(2) 1/2 tbsp peanut butter (I used honey peanut butter)
Cinnamon
1 packet of Stevia
1/4 tbsp vanilla

1- Bring the milk to a boil then add in the oats being sure not to let them burn.  I remove them from the heat for a while so I can turn down the flame.

2- Add stevia, vanilla, and cinnamon.  Continue to stir until done then remove from flame.

3- Cut your strawberries (3 for the bottom) and layer them.  Add 1/2 tbsp peanut butter and yogurt.

4- Add your oats, then add the rest of the strawberries, yogurt and peanut butter on top.
300 calories

My pobrecito during his first doctors visit.

Are you a Big Reader? What is your favorite series??
