I live a pretty Carb Free life (which I am not happy about but such is life) so I don't get access to a lot of my favorite foods. Especially my number 1- Pizza. Or just "Za" as The Honeypie calls it.
Being from NY makes it kind of mandatory to love pizza, but I am pretty sure I go overboard. I think about a nice gooey slice with the cheese dripping down and all the orangey oily goodness on the wax paper. Yummy in my Tummy. And if it were up to me, I would eat delicious cheese pizza everyday. But that would not agree with my midsection. Luckily I found this recipe for a pizza crust that eliminates the doughy crust all together.
The Skinny
Enter Cauliflower. I can't really describe the taste, but you definitely can tell that you are not eating sincere pizza dough, but it is a suitable substitute. I am obsessed with cooking out of the box so when I found this I knew I had to give it a try and boy was it worth it. This recipe was quite delicious, however, I would prefer to use less cheese and still keep the crust together and not break apart-ish. The jury is still out. Until then, enjoy!
Cauliflower Pizza
Serves 2 (or 1 hungry person); adapted from Eat. Drink. Smile
Ingredients:
Take a large head of cauliflower, remove stems and leaves, and chop into chunks. I dont have a food processor so I had to grate mine, but if you have one just pulse until grainy. Save the excess for later. Place in a microwave safe bowl and microwave for 5-8 minutes depending on your microwave. No need to add water because the cauliflower naturally juices itself!
Preheat oven to 450 and spray a cookie sheet with non stick awesomeness.
In a bowl, stir together cauliflower, egg, and cheese. Add garlic, garlic salt, oregano and black pepper. Transfer to cookie sheet using your hands and pat out into a 9 " circle (or as close as you can get). For crisp pizza, brush olive oil on top.
Bake for 15 minutes or until desired crispyness. New Yorker here so I like mine CRIS-PAY
Remove and add sauces, cheese, veggies, or any of your desired toppings. Turn oven to broil and return to the over for 5-10 minutes!

1 cup shredded mozzarella cheese
1 egg, beaten
1 tsp dried oregano
1/2 tsp crushed garlic
1/2 tsp garlic salt
olive oil
black pepper
pizza sauce (I used sundried tomato sauce and garlic pesto sauce), shredded cheese and your choice of toppings*
